Yum at Home: Banana Oatmeal Pancakes

...with peach sauce, if you want. And why wouldn't you want peach sauce?

What kind of monster is anti-peach?
These are easy, healthy, tasty pancakes you can throw together in a few minutes. My new favorite breakfast!

First, a big thank-you to Karoll for introducing us to this recipe and sending us the old blender to make them with! Yes, you will need a blender to make them, which is the only tricky part. It's possible you could use a food processor too, we haven't tried that. And thank you to Alida Ryder at Simply Delicious for posting the version of this recipe that I'm using.

Here's what you need: 2 bananas, 2 eggs, and a 1/2 cup of oatmeal.

Healthy things only. Hooray!
Also, throw in a 1/2 teaspoon of baking powder and a pinch of salt. We didn't alter the recipe at all for the altitude, and it turned out pretty great, so no worries if you live in mountainy places like we do. Puree the whole shebang in a blender, let it sit for 10-20 minutes (this is the perfect time to make bacon, turkey bacon, or peach sauce), then pour it onto the pan and cook like regular pancakes.

Perfect pancakes, not too puffy! That bottom left one looks a little wonky though...if you squint it sorta looks like a pear.
Top with your favorite pancake topping (Lemon Curd, fruit, maple syrup, or that fake corn syrup shit my girlfriend likes), and enjoy!

Banana Oatmeal Pancake Recipe:

2 bananas
2 large eggs
1/2 cup oatmeal (I used 1-minute oats, but I'm sure 5-minute or old-fashioned would be fine)
1/2 teaspoon baking powder
pinch of salt

1. Combine all ingredients in blender

2. Let the mixture sit 10-20 minutes to thicken

3. Pour onto greased non-stick pan over medium-low heat and cook until tasty

Fruit Sauce:

1 peach, chopped OR 1 cup of sliced strawberries or whole raspberries, blueberries...etc.
juice of 1/2 lemon (adjust to taste, I think things really lemony)
pinch of sugar

1. Combine all ingredients in bowl and stir, mashing up fruit if you want

2. Let sit for 5-10 minutes or as long as it takes for the rest of breakfast to be ready

3. Spoon over pancakes, french toast, or waffles, or just eat directly from the bowl
